Vacation

I just took a road trip with my family from Eureka to Kernville, then to South Lake Tahoe. On the road to South Lake Tahoe, we stopped at a Carl's Jr. It just so happened to have The Green Burrito (The Restaurant that sometimes shares the same space). I tried the Southwest Tacos and fell in love with them. I wish we had one in our Carl's Jr. in Eureka. We have nothing comparable to this restaurant in Eureka. The tacos tasted sooo fresh and it wasn't fried. Everything at Taco Bell is fried or just upsets your stomach. The Green Burrito was delicious! In South Lake Tahoe, we dropped into a Baja Fresh... They have no microwaves, no freezers, and no canned food. You can see how they prepare EVERYTHING. This food was delicious too.
On our trip in Tahoe, we rented bicycles and rode through the paved trails meant just for walking and bike riding. The trail goes through the woods, to various towns, and even takes you to the beach. The ride was exhilarating and the rentals were only $9 hour per bike. In Tahoe there are tons of places you can rent Kayaks from but there is one that is more affordable and on a beach that less tourists go to. Its at Baldwin Beach, and Timber Cove Marina runs the Kayak Rental. It saves you between $5 and $10, depending on how many you are renting. You do have to pay to get into the beach but there is a parking lot before the pay booth and you don't have to pay the $7 fee. Oh, and no dogs are allowed at that beach. Most beaches in South Lake Tahoe have day use fees.
While we were looking at places to get married, we were told about Sand Harbor. After the 30 minute drive there, and the 30 minute wait in line... in our CAR, we were told that its $12 to get in. All we wanted to do was look at the wedding site! They said we could look without paying but we couldn't PARK! So we drove by and couldn't really see anything. When we thought that our guests for the wedding might have a different entrance rather than waiting 30min to get in, we were corrected. They have to wait in that same line. They have reserved parking but, you have to wait to get through the line and the people in front of you only get in as others leave the parking lot. So who knows how long our guests would be waiting. Then we asked about booking.... They don't book til the 1st of January and the way they book is by first come first serve. People line up, in their cars, waiting for them to open. They take calls last. That's Ridiculous!
Anyways! Overall the trip was fantastic. I love Lake Tahoe, and would love to move there.

Marriage Survival...

I was reading an article in Readers Digest last night and couldn't help criticize what they said in the article. It was talking about ways to predict if your marriage will end in divorce or survive. Now, marriage is suppose to be about love and your ever after. But when they say that you will either divorce or survive your marriage... That just sounds horrible. To survive something entails that you have to go through something difficult, bad, or impossible. It makes marriage sound impossible and that there is no hope for any marriage. I'm getting married next year and I have been with my fiance for 6 years now. A relationship can be difficult at times and raising children together may be impossible. But I still don't think that anyone should view marriage this way. It's sad to think of making it through your marriage with a survival instinct.

Tacalatas

Its funny and a mouth full! I came up with this recipe years ago and I still love it. It's my favorite. You can take any regular enchalada recipe and make these few tweaks to create a Tacalata dish. All you will add or be sure you use in the recipe is sour cream, olives, corn, lime juice sqeezed onto the taco, and rice pilaf from rice-a-roni. Everything else you add should be in any enchalada recipe. When you form the actual enchalada, you don't roll it... You place it in the pan like a taco. This makes the top crunchy when you bake it. The last thing you should put on before baking is the cheese... The last thing I like to put on after baking is the sour cream. I don't know why but I like my sour cream cold. Try it, I hope you like it! The rice-a-roni adds a great taste to it especially with the lime.

New Recipe!

So the other day I was watching Barefoot Contessa on Food Network. She was making a Breakfast Bread Pudding (similar to french toast). I tried the recipe and it was really good but I did tweak it a little bit. I just wanted to share the recipe. Ingredients: 5 eggs, 2 extra yolk, 2 1/2 cup 1/2 and 1/2 (I used regular milk but for a better taste, use the 1/2 and 1/2), 1/3 cup honey, 1 1/2 teaspoon vanilla, 2 teaspoon orange zest, 1 teaspoon salt and a loaf of bread (I used french which was good but sour dough would be better). I added cinnamon and sugar to the custard and on top before I baked it.
Mix everything together except for the bread of course! Then place the slices of bread in a sprayed non-stick pan, layering them on top of eachother. Sprinkle the cinnamon and sugar over the slices with generousity! If you are adding the cinnamon. Pour the custard over the slices and you can sprinkle some more cinnamon if you'd like. Press the bread down into the custard to absorb the liquid.
Bake for 45-60 min in oven 350 degrees. Then Eat after it has cooled a little!

This Has To Be Connected

I think it's really strange that there are so many big earthquakes happening around the world back to back and suddenly there are two tornados in two cities that never get tornados. All this bad weather and the earthquakes are making me a little nervous. Should we all be leaving California for a little bit? Well I'm definitely going out of town when December 21, 2012 rolls around, but it sounds like it might be coming a little early.
